Stepper motors or ac servo motors?

What is the best for doing 3d carving. Will they both work.

Stepper motor or ac servo motors

Both will work, it comes down to speed. Servo mtr are much faster but they are much more expensive also. So there is going to be a trade off of speed and expense, with the speed you may be able to add enough projects to offset that added expense for the servo choice.

by tuned i mean the relationship between gearing, power needs, drive and the balance of this when compared to what the end user needs in order to achieve thier desired work. a large motor with a too small drive will loose steps.

"Tuned" is probably not the right term to use.
As long as you don't exceed their capabilities (acclerating too quickly, or trying to run too fast), steppers work very well.
