I have a dyna myte DM 2800 and would like to convert over to Mach3 as well. Would you recommend the Gecko G540 with smooth stepper for this conversion? Any advice would be much appreciated.

There are some many things to consider when doing a conversion, my advice is to read up on all the "successful" builds you can and see what will work for your project and skill level before deciding on the architecture.

Not complete yet. The G540 & smoothstepper are on the way. I would really like speed and performance. Will the G540 do this wired in series (60IPM with 100IPM rapids with original gear reduction/power supply/motors) or should I upgrade to the G203 wired in parallel? Maybe I'm overdoing it and/or wishful thinking. Basically would like to at least match the Dyna original speeds.
Power supply 48V DC 300 Watts 7Amps
Stepper motors (P852-508-B)
Belt reduction 2:5:1
Ball crew 2.5mm pitch
I also own a Taig cnc mill for over 12 years now and the speed and performance is poor. It's like watching paint dry

You will get the rapids of the Dyna as it was intended with the G540. The smoothstepper didn't give me much of an increase in speeds, smoother to some degree. The problem is the gearing, ditch it and the machine will fly. My 2400 was running 101,000 steps per inch at 10x microstepping. My G0704 runs only 2000.
A lazy man does it twice.
