where could I get a full manual about iTNC530 programming station demo version ?

specifically for the demo version there is no documentation. But with the Installation zip archive you'll get also "Operating Instructions for Programming Station" -> looking for BHBPgmplatz_en.pdf
Otherwise you'll find for iTNC530 control detailed documentation in different languages on HEIDENHAIN TNCguide:
