Can a dmm system do 5 axis?

Is it possible to add an extra bob onto my smooth stepper and have another axis ?

Would like to run a 4th and 5th on the table

You would just add another Breakout Board to the Smooth Stepper, & configure that output in your computer and Smooth Stepper to suit your Breakout Board

Are you using the Ethernet Smooth Stepper ?
