Hello! I am new to carving type of capability software. What is going to simply carve the recess that you would see on a chair seat? That is my immediate need nothing else? I am using a Biesse Rover B 4.35 with a C axis.

For things like that, I'd recommend a combination of Rhino for the modeling, and RhinoCAM for producing the toolpaths from the model. That would be capable of much more than your chair seat recess, but it could certainly deal with it, probably without requiring more than 3 axes.
I've seen people do it with Vectric's Aspire, but that wouldn't be my recommendation.
You can model your seat in any 3D CAD program, and use an inexpensive CAM program like MeshCAM, if you can write a post for your machine for it.
