In theory if there's not much drag they should work. As long as they don't work loose that is.
Only thing to bear in mind is are the cutting forces going to be stronger and enough to put a squeeze on those washers at all?.
I would've put one either side on the X mount myself.
Mine are all like your Z screw and I have alu foil shimmed mine at the spacer.
In terms of the grease fittings I would either:
1: Build a one shot oil system using 90 degree fittings etc. I think my one cost around <£200 but I used expensive metal high pressure elbow fittings so I should never have any breakage worries. They're like 4x the price of the plastics.
Or
2: (you'll get what I mean) If you just want grease them then
1st get some 90 degree fittings like from a one shot that take 4mm tube.
2nd. Run the tube to a suitable point on the machine casting.
3rd. Drill through casting at that point and thread tap/fit another fitting internally for the tube.
4th. Fit a grease nipple externally at that point. Casting isn't that thick so you'll likely need a small piece of ally attached to the casting to get it all to fit properly.
Now when you put grease through the nipple/zerk this will then flow through the tube and into the nut.
Definitely needed for Y , Z.

So grease into nipple from outside machine- travels through tube- into ballnut. Simples.
The Z is better with elbow on nut- then elbow+nipple attached to replaced plate at top of Z column that covers where the leadscrew handle is taken from.
