If you are using a low cost, Chinese probe, it is almost certainly going to be a "normally closed, open on deflection" type. These types of probes have a wire going to them and generally have little/no electronics in them. The three bars and six ball bearings inside the unit form a simple set of six "switches" that are in series.
Anything that has an external box on it, such as the Renishaw products, are a different matter. They often will have both a NO and NC set of interface points. An example of such a product is the MI8-4, although there have been other products that perform the same function before.
