are SBR rails designed to be used strickley mounted to a horizontal surface or will they also work mounted against the face of a gantry on a vertical plane?

Yes, you can use them like that, no problem at all.

Following on from the original question, do SBR rails and linear bearings preform better in any particular orientation?

I'm struggling to settle on a design for my machine. I can't decide how to orientate my x and y axes.

Is it best to lay the rails flat on their back with the bearings on top or the opposite with the bearing blocks suspended below or at 90 degrees or does it not matter?

If mounted properly, most linear rails can be mounted in any orientation.

To be sure of your choice of rail, check the specs on the manufacturers web site. Nearly all have a tech/engineering section included within their on-line catalogs.
