I entered a value for my Gage Block Height but it didn't do what I expected (conclusion: user error).

There are two different ways to use it, in two different places.
For the one in the upper left, with the tool on the gage block, pressing the button sets the Z vale to the gage block thickness. So if the gage block is on your workpiece, Z zero is set to the top of the workpiece.
With the one on the right side, when you press the button, you set a G43 length offset for the current tool.
Both should give similar results.
