Is there a method of X,Y, probing, (on an all metal setup) to touch off with my tool. Rather than using my probe and without using my moving plate?

You can use an isolated touch plate against the workpiece, and probe to the plate with the tool.
Just enter the plate thickness in the wizard.

Gerry - Yes I am currently doing this with my moving plate. Trying now to make a tri-cornered isolated block fitted with independant x,y & z touch plates to snap onto a square corner with rare earth magnets.
