The higher the voltage, the more torque you'll have at higher speeds, which will result in a higher top speed. The downside is that the motor will run hotter. But drives with idle current reduction can reduce some of that heat.
The current rating should be the total of at least 2/3 of the rated torque of each motor. Three 6 amp motors would need a 12 amp supply. Having more amps doesn't make any difference.
You'll need a drive like the KL-8060E or Leadshine DM860 or EM705.
