I am not sure I can answer your question, but I think that you can do feed override from the Axis gui.

You can do feed over ride from the GUI in EMC. You would need to have ADC to get the pot signal into EMC then you could control the feed over ride with it.
I've done it with a multi-function jog-wheel:

you need to get the signal as a HAL-pin. presumably the driver for the vital board has a pin for the analog input?
There's no pin for feed-override in the standard EMC motion-controller (I think), so you need to load something called Halui (HAL-user interface). Halui will create HAL pins for controlling almost everything you would control from a normal UI (like Axis). So then you wire your AD input to the feed-override and it should work. The signal might need some scaling etc. but the basic idea is very simple.
