Wondering if someone can help direct me to any documentation etc needed to get
a VF2 network set up in order to download gcode from my computer

The machine has a serial connector with an adapter connected to a lan cable.

I'm assuming, being that this is an older machine, that cable is a null cable, but would
like help getting this connected.

Do I need an older computer with a serial port?
Is there some older communications software I am going to need?

I'm guessing this machine was mfg'd in a much different computer time...

They sell serial cards for modern computers. My guess is u will need some software but almost sure u will need to use serial interface. Search for the user manual online or on eBay

...there are a many options these days to Transfer files, DNC, or monitor CNC machines. The age Haas controller you have and depending want you need to do from Job to job in your shop. Serial to IP is good option...this would give anyone access from any PC on your Network with somekind of software like freeware Putty.

Or use a name brand USB to RS232 like Triplite or Serial RS232 card for the PC side.

Your Haas Parameters would need to set to match CNC>PC
