I have a Cnc Drive UC400ETH and looking to upgrade my breakout board. I have an older candcnc breakout board and would like to upgrade to something that has spindle control. What breakout boards is everyone using with the UC400ETH?

It all depends on what you want to do and the functions you need. A C11G or C10 boards would be good options:
